Rhubarb Cocktail

It’s rhubarb season! What better way to enjoy it than with a refreshing cocktail? This drink perfectly combines the tartness of the rhubarb lemonade and freshness of the mint. A touch of lime, and the sparkling wine round it up to make every sip feel like summer! You could make this with just sparkling water for a virgin version too.
Ingredients for the lemonade
- 8-10 rhubarb stalks, finely chopped
- 3-4 tbsp of brown sugar (depending on preferences)
- 1 liter (32 oz) of water
- Juice of ½ lime
- 1 tbsp fresh mint, finely chopped
Directions
- Place chopped rhubarb in a bowl with sugar and let sit for 10-15 minutes.
- Transfer to a pot with the water and bring to a boil. When water is boiling, reduce heat and add mint. Let simmer until rhubarb softens.
- When the rhubarb is softened, add lime juice and simmer for 1 more minute.
- Strain lemonade through a fine strainer and let cool in the fridge for at least 4 hours.
Rhubarb Cocktail
makes 2
- 4 oz gin
- 6 oz rhubarb lemonade
- Ice as needed
- 6 oz cold Prosecco
- Lemon or lime rounds for garnish
Directions
- Add gin, lemonade, and ice to a cocktail shaker and shake until very cold.
- Pour into a glass and top with Prosecco.
- Garnish with favorite toppings.
- Alternatively, you can mix all ingredients in the glass and serve over ice.
NOTE: You can make the lemonade and keep it in the fridge for a few days, so you can make cocktails any time.
