Chocolate Raspberry Oatmeal Squares

These squares are a perfect option for a quick breakfast! They are rich in fiber from the oats, which helps to fuel you throughout the day. The raspberries add a little tartness and the chocolate adds a little energy boost. You can replace the flour with whole wheat pastry flour if you want to add in more whole grains into this recipe!

Ingredients

  • 1 cup oats
  • 1 cup almond milk
  • 1 cup pastry flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 1 5-oz container yogurt (I used siggi’s)
  • 1 egg, beaten
  • ¼ cup vegetable oil or melted butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ⅓ cup chocolate chips
  • ¼ cup chopped walnuts
  • ¼ cup raspberries

Directions

  1. Preheat oven to 400F
  2. Soak the oats in almond milk, set aside.
  3. Combine dry ingredients in a large bowl and set aside.
  4. Whisk the egg and the yogurt together. Add maple syrup, oil, and vanilla extract
  5. Add the egg mixture to the soaked oats.
  6. Combine wet and dry ingredients.
  7. Fold in walnuts, chocolate chips, and raspberries.
  8. Transfer into a baking pan lined with parchment paper.
  9. Bake for 10 minutes at 400 F
  10. Lower heat to 325 and bake for 20-25 more minutes.
  11. Let cool on a rack. When cooled, cut into squares and enjoy!

Food is amazing and supports health. However, food alone can't treat a single disease and prevention is also complicated because genetics play a huge role. Using this mantra pushes all responsibility on the consumer and away from the systems that are in place, preventing us from reaching optimal health. It's a sedative that satisfies a few, leaves many where they are now, and takes away responsibility from policy makers to propose a true reform that would actually benefit the public's health. It should never be food/lifestyle OR medicine.
